Sunshine

I like winter - to an extent. I enjoy watching the seasons change and totally get the concept of it being a period to reflect, to create your own warmth and to look forward to the year ahead.

I know we're forever whinging about how crap our weather is in the UK, but the last couple of months have been consistently colder, greyer and snowier than any I remember. Romantic season watching aside I've been ready for summer for quite a while now.

My ideal climate would consist of 2 weeks winter, 2 weeks spring, 4 weeks autumn and 44 weeks summer. Enough time to enjoy the unique offerings that other seasons bring (beautifully coloured leaves, snow etc), with the option to spend evenings outside in sandals and a single layer of clothing the rest.

It's not that I find lack of sunshine depressing per se, rather that its presence really boosts my energy levels. I've used a light box for the past couple of years which helps to a degree, especially when having to get up and go to work whilst it's still dark outside. It's no substitute however for the real thing.

I know the obvious answer is move to a warmer climate, but I like the UK and for all it's failings it's a pretty great place to live.

So, rant aside; yesterday we had proper sun for the first time in ages.

Our coatless walk was on reflection a little cold, but it was so refreshing to be outside enjoying the light. For a few moments on Sunday afternoon whilst relaxing by the window bliss was achieved.

Alcohol isn't the answer to many things, but having a glass of something good in your hand when you've nowhere else you need to be often helps.

The following drink was concocted and worth remembering / recreating again:
Muddle / crush the strawberries in the bottom of a cocktail shaker and add the rest of the ingredients. Shake until your hands go numb from cold, then stain into 2 glasses. Float a 1-2 tsp of the strawberry puree on each.

Warning: this drink goes down very, very easily. It's probably worth making 2 batches (or a jug) in advance.

I'm really loving the cucumber gin I made a while ago at the moment. It's really quite impressively cucumbery and a little goes a long way (you could probably lower the shot to a half if you're less of a fan). I've been a big lover of Pimms since it's vegan status was confirmed a few years ago and strawberries are always good.

Strawberry Pimms Cocktail

A simple cocktail using the aforementioned sorbet.

This is really what I had in mind when I made the sorbet. It is however just as good eaten without the alcohol.Shake the ingredients together and serve immediately.

At some point I'll experiment with getting some cucumber flavour in too :)

Mint & Strawberry Sorbet

Continuing on the theme of grossly out of season recipes.

Whilst out shopping a few days ago we acquired 2 punnets of organic strawberries, down from £2.99 each to 49p each. Perfect condition, just in need of eating quickly.

Recipes on line for mint-strawberry sorbet seem to involve mincing/shredding/blending the mint, which can surely only cause little specks that get stuck in your teeth like a bad mojito. The real taste of mint is in the oil, so I experimented with using muddled mint in syrup and discarding the leaves.

The result was pretty damned amazing; it's one of the nicest sorbets I've ever had either in a tub from a shop or in a restaurant. I'm guessing that part of the reason for this is the cost; I didn't use extra water or juice to bulk it out.

It's definitely a strawberry sorbet rather a mint sorbet, however the flavour totally comes through. The sugar and the lemon really lift the taste, but there's only a small amount of sugar added - it's a reasonably healthy recipe.

Ingredients:
  • 400g Hulled Strawberries
  • 18g Fresh Mint Leaves
  • Juice of Half a Lemon
  • 2 shots Simple Syrup
Hull the strawberries and blend until totally puréed.

Wash the mint and tear off leaves. Muddle with 1 shot simple syrup. Pour some of the strawberry purée in, combine then add back to the rest of the strawberry. Force the mixture through a sieve to remove the mint, which should then be discarded.

Whisk in another shot of simple syrup and the juice of half a lemon. Transfer to a freezable container and place in freezer for 15 minutes. Take out and whisk briefly then place back. For the next 2-3 hours repeat this process of whisking every 15-25 minutes, to ensure that no large ice crystals form.

Before serving (if your freezer has turned it very hard); remove from the freezer and allow to sit for a few minutes before scooping.

Strawberry Basil Cocktails

After several failed attempts I've found something actually quite drinkable.

I've been aware of the strawberry/basil combination for a while, but didn't become interested in it until they were both out of season. I like basil and I like strawberries, so why not? Luckily I picked up some sensibly priced strawberries this week and over the past couple of nights have been trying out various recipes off the internet.

Some recipes were just plain horrible; I'm not a fan of martinis at the best of times so strawberry/basil/vodka/gin was never going to be a winning combination. There seems to be a trend for using crushed black pepper and I can appreciate the extra dimension of taste that it brings, but it's not for me. Sugar syrup definitely brings out the taste, but makes the drink a bit sweet. The mojito recipe I tried sort of worked, but sort of didn't. Morgans Spiced (which I love in other drinks) completely overpowers the taste of the basil and defeats the point.

Eventually I found that peach schnapps and light rum goes pretty well, so here's the first combination I've come up with that I like and would happily drink again.

Ingredients:
  • 3 Strawberries
  • 3 Large Basil Leaves
  • 1 Shot Peach Schnapps
  • 1 Shot Light Rum
  • Ice
  • Pineapple Juice
Muddle the strawberries and basil until the strawberries have been puréed.

Fill the glass with ice and pour over the spirits. Top with pineapple juice and stir.

Serve immediately with a straw or strain and serve in a martini glass.
